No Noodle Zucchini Lasagna

Slice zucchini into long slices. Cook in boiling water just until limp, about 5 minutes. Drain on paper towels. Failure to due this step will result in a watery lasagna.

Machaca Con Huevos

Machaca is beef that has been marinated, cooked, shredded and then dried. It is very similar to beef jerky. It is available in the Hispanic section of large supermarkets or in Mexican grocery stores. Yummy with fresh homemade salsa.

Cream of Zucchini Soup

Hot Poppers

TIP: Wear gloves when handling the jalapenos and triple the recipe. I found they refrigerate well and are a less spicy hot  and  more flavorful the second day.  Great appetizer for parties!

Simple Hot Artichoke Dip

TIP:  I love this with sliced bell peppers, celery, brocolli, or any raw vegetable. Try to use mayonnaise like Hellmans that only has a trace of sugar.
